VANILLA & BLACKCURRANT CHIA JAM


Do you find store bought jam too sweet and lacking fruit flavour ? Then you will love this jam recipe as it is absolutely perfectly balanced between sweet and sour taste.

I loved it so much that first time I made it that it has disappeared literally in three days. That's why I have made double batch second time ...just to make sure it will last me for a week or so.





I love it on top of sourdough with peanut butter or as great addition to my morning oats. Ultimate comfort food !

Servings : recipe will make 250ml jar


Ingredients :

  • 2 cups of frozen blackcurrants

  • 3 tbsp of maple syrup

  • 2 tbsp of chia seeds

  • Juice from 1/2 lemon

  • 1 tsp of vanilla powder

Method :


1. Start by cooking blackcurrants in saucepan covered with lid until soft. This should take around 5-10mins.

2. Transfer cooked blackcurrants in a bowl and add rest of the ingredients. Mash up with a fork.

3. Pour mixture into a jars and let set in fridge for at least 1 hour.

4. Store in fridge for up to week and enjoy on sourdough, rice cakes or in oats !
