SINGLE SERVE ESPRESSO COOKIE

THE COOKIE you need in your life ! Single serving of giant cookie with espresso in it !

Can 't get better than this right ? Yes is also gluten free and vegan !



Makes 1 cookie



Ingredients :

Dry

3/4 cup oat flour

1/4 cup almond flour

1 tsp baking powder ( I used double acting)

Wet

1 cup espresso ( 30ml )

3 tbsp coconut sugar

2 tbsp coconut oil

1 tbsp flax meal


To decorate

3 square dark chocolate

4 pecans

Sprinkle of pink salt



Method :

  1. Preheat oven to 180 degrees.

  2. Combine oat flour , almond flour , oats and baking powder in a bowl.

  3. In seperate bowl combine espresso with coconut sugar and coconut oil, then add flax meal. Let sit for 2 minutes.

  4. Fold dry mixture into wet and combine well. Scoop out on top of baking tin lined with parchment paper.

  5. Form into cookie shape, press down using lightly wet hands( so it doesn 't stick) and top with chocolate pieces, pecans and sprinkle of salt.

  6. Bake for 15-20 minutes until slightly golden. Let cool down and enjoy fresh.
