Pumpkin season is here - let's make the most of it and try this delicious fluffy pumpkin pie pancake recipe. This recipe is super easy, delicious, fluffy, moist and also protein-rich ! What abetter way to start any day than with healthy pancake stack like this one.

Top with thick creamy coconut yogurt chocolate pieces and maple drizzle ! Extra comfy for late crispy cold fall mornings.

Servings : Makes 7-8 fluffy pancakes

Ingredients :


1 cup of buckwheat flour

2 tsp of baking powder

1 tbsp unflavoured plant based protein powder(optional)

1 tbsp of coconut sugar

1/2 tsp ginger powder

1/2 tsp nutmeg

1/2 tsp cinnamon


1 1/2 cup of plant based mylk

1/2 can of pumpkin puree

1 tbsp of acv

Toppings -

1 tbsp coconut yogurt

Maple syrup for drizzle

2 squares of diary free chocolate

Method :

1. Start by whisking wet and dry ingredients in two separate bowls.

2. Fold dry mixture into wet and combine well.

3. Cook on medium heat on preheated non-stick pancake pan from both sides until golden and fluffy.

4. When ready top your stack with coconut yogurt, diary chocolate and maple syrup drizzle .

5. Enjoy !
