COFFEE AND WALNUT CRUMBLE CAKE

Coffee and walnuts are definitely friends that go along really well. And this cake is your proof. Healthy, moist with crumble topping and cooked apple slices. These cake slices are absolutely delicious easy to bake and perfect as snack or for breakfast.



Servings : 9 slices



Ingredients :

Cake base

dry

1 cup of oat flour

1 cup of buckwheat flour

1 cup of walnuts

2 tsp of baking powder

1 tsp vanilla powder

pinch of salt

wet

1/2 cup of mylk

1 cup of coffee

1 tbsp acv

2 flax eggs ( 2tbsp of flax meal + 5tbsp of water)

3/4 cup of coconut sugar


Topping for filling

1 apple


Crumble topping

1/2 oat flour

1 cup of walnuts

4tbsp of coconut cream ( or 2 tbsp of coconut oil )

2 tbsp of coconut sugar



Method :

1. Preheat oven to 180 degrees.

2. In a food processor process all dry ingredients until crumbly and in separate bowl mix all wet ingredients.

3. Fold dry mixture into wet and combine well.

4. Layer baking tin with parchment paper and transfer mixture evenly into it.

5. Peel apple and slice into thin slices. Top base with apples.

6. In food processor process all the rest of ingredients for topping until well combined to make your crumble topping. Transfer on top of apples and bake your cake in the oven at 180 degrees for 35-40 min.

7. Make sure that top crumble won't burn so rather place in the bottom of the oven. To test if the base is cooked throughly use toothpick or fork. If it comes out clean your cake is ready.

8. Let cool down and slice into equal slices.

9. Enjoy fresh!
