I don't know about you but crepes are one of those meals that always leave me happy, satisfied and bring some childhood memories. I used to love my crepes with jam, whole loads of whipped cream and chocolate! Nowadays I go for exactly same thing but slightly healthier option and sometimes with little tweak like this recipe. Crepes served with dollop of coconut yogurt(instead of cream) and soft sweet cooked apples in cinnamon ! So good !
Servings : 2
1 cup buckwheat flour
1 tbsp coconut yogurt
2 cups of plantbased mylk
1 tsp vanilla powder
5 peeled apples
1 tbsp maple syrup
1 tsp of cinnamon
1 cup of coconut yogurt
1 tbsp of almond butter ( optional)
1. Whisk all ingredients for crepes batter in a bowl until well combined batter should be runny.
2. Cut up your apples and cook in saucepan with maple syrup and cinnamon, covered until soft ! ( this should take around 10-15 min on medium heat)
2. Preheat non-stick pan ( if you using regular pan use bit of coconut oil to cook) and cook your crepes from both side on medium heat for around 3 mins each side or until slightly golden.
3. When your apples and crepes are ready roll them up, fill and top with apples and coconut yogurt and almond butter.
4. Enjoy !
