This breakfast recipe is insanely delicious and I would honestly say that this baked oatmeal tastes like having a cake for breakfast. Oh and just to not forget to mention it is 100% wholesome and healthy.

I have used fresh plums for fruit base but feel free to choose fruit you have available.

Servings - makes medium size baking loaf/bowl

Ingredients :

1 cup oats

1 cup oat mylk

2 tbsp almond flour

1 tsp baking powder

1/2 tsp vanilla powder

2 fresh plums ( or any other fruit )

Banana cream

1 frozen banana

Handful of raw cashews

1/2 cup mylk

Method :

  1. Preheat oven to 180 degrees.

  2. Combine oats, almond flour , baking powder , vanilla in a bowl. Then stir in mylk. Mix well.

  3. Layer baking tin/bowl with cut up 1/2 amount of fruit you are using. Transfer mixture into a bowl and top with rest of fruit.

  4. Bake in the oven for 30- 35 minutes until slightly golden.

  5. Meanwhile place ingredients for banana cream in a blender ( I have used small blending cup) blend until smooth and creamy.

  6. Pour over warm baked oats and enjoy fresh.
